In a bowl of warm water, soak the pitted dates to soften. Set aside. Let soften for about 5 minutes.
In a blender or food processor, add walnuts and pulse until fine-ground. Add almond pulp, hemp seeds, vanilla, cocao, nut butter, and sea salt. Blend until a dough forms. Refridgerate for 10 minutes.
Roll out into a balls using a 1-inch cookie scoop. Roll in extra cocao, hemp seeds, or shredded coconut. Store in an airtight container in the freezer and enjoy!
