Cocao Bliss Bites

A sweet way to use up leftover almond pulp after making homemade almond milk.

Ingredients
  

  • 1 cup walnuts
  • ½ cup dates
  • cup almond pulp
  • cup cocao powder
  • 3 tbsp hemp seeds
  • ¼ tsp sea salt
  • 3 tbsp almond butter or another nut butter of choice
  • 1 tsp vanilla extract

Equipment

Method
 

  1. In a bowl of warm water, soak the pitted dates to soften. Set aside. Let soften for about 5 minutes.
  2. In a blender or food processor, add walnuts and pulse until fine-ground. Add almond pulp, hemp seeds, vanilla, cocao, nut butter, and sea salt. Blend until a dough forms. Refridgerate for 10 minutes.
  3. Roll out into a balls using a 1-inch cookie scoop. Roll in extra cocao, hemp seeds, or shredded coconut. Store in an airtight container in the freezer and enjoy!
