This recipe people. This creation is the reason I decided to blog about my wellness journey. About a year ago while on short-term vegan diet recommended by a thyroid specialist I saw for my Grave’s Disease, I was eating every legume under the sun to replace my animal protein-filled diet. I had a new found love of lentils and and old-time love of balsamic vinegar so I combined the two in a savory, super-simple roasted vegetable dish. This was my go-to vegan dinner recipe.
