After making homemade almond milk last week, I had all this leftover almond pulp. I don’t like wasting food so I scowered the internet for inspiration. One of my favorite food bloggers, Minimalist Baker, popped up on my search so I decided to give this recipe a try! Everything I make from Minimalist Baker’s blog is delicious so I was excited to try something new.
I wanted something sweet but low in sugar, chocolatey, and had a little nutrition benefit. I also wanted something I could snack on and store easily. This recipe fit all those boxes and, most importantly, tastes delicious. Nuts, dates, hemp seeds, and cocao, provide health fats, protein, and anti-inflammatory benefits with just the right amount of sweetness.
How to Make Brownie Bliss Bites
These are so easy to make. All you need is a food processor or blender, a few measuring cups and a few simple ingredients. Start with the walnuts and blend in your food processor until pulverized. I prefer soaking dates before using them to soften which makes them easier to blend. You can skip the soaking if your food processor is powerful enough. Add all other ingredients to the walnut crumbs and blend until a dough forms. Pop them in the fridge for 10 minutes before rolling into balls. After rolling out, roll around in cocao powder, hemp seeds, or coconut flakes.
If you’re like me, chocolate cravings typically come after dinner. Lucky for me, these make a great night time snack or dessert! Walnuts and cocao help you sleep while no added sugar and healthy fats will support a healthy blood sugar curve keeping you satisfied and out of the snack cupboard at 10pm.
Storage
I prefer to store these bites in an air-tight container in the freezer for the best texture. If you prefer a softer texture, store in the fridge for one week.
Cocao Bliss Bites
Equipment
- mixing bowl
- measuring cups/spoons
Ingredients
- 1 cup walnuts
- ½ cup dates
- ⅔ cup almond pulp
- ⅓ cup cocao powder
- 3 tbsp hemp seeds
- ¼ tsp sea salt
- 3 tbsp almond butter or another nut butter of choice
- 1 tsp vanilla extract
Instructions
- In a bowl of warm water, soak the pitted dates to soften. Set aside. Let soften for about 5 minutes.
- In a blender or food processor, add walnuts and pulse until fine-ground. Add almond pulp, hemp seeds, vanilla, cocao, nut butter, and sea salt. Blend until a dough forms. Refridgerate for 10 minutes.
- Roll out into a balls using a 1-inch cookie scoop. Roll in extra cocao, hemp seeds, or shredded coconut. Store in an airtight container in the freezer and enjoy!
